Today I'm here with a recipe for Antep katmer. Of course, I can't make it like the katmer masters, but I can say I've made the best katmer recipe you can make at home. I can't be too modest about it. 😄Let's get to the recipe, dears😍 Required Ingredients 2 cups water Half a teaspoon of salt 5.5 to 6 cups of flour The dough should have a medium consistency To make the dough 100 grams of ghee or butter or margarine Half a teacup of vegetable oil For the filling Pistachios, walnuts (optional) Sugar Prepared Kaymak For the Semolina Kaymak 4 cups milk Half a cup semolina Preparation of the Kaymak Place the milk and semolina in a pot and stir. Once it begins to boil, remove from the heat and let it cool. Note: I didn't let the kaymak rest for long to avoid delays in processing. You can let it harden a little longer while you're making it. Instructions Add the dough ingredients and make a slightly stiff dough. Divide the dough into 8 equal pieces. First, brush each piece with a little clarified butter, then place it on a greased baking sheet. Press it down lightly with your hands. Cover and let it rest for at least 4 hours. (Note: If you make the dough the night before, it will roll out better; you can make katmer for breakfast in the morning.) Roll out the rested dough thinly as shown in the video, cut off the edges, and form a square. Add pistachios, sugar, and 1 or 2 tablespoons of sugar, depending on your taste. Brush with a little clarified butter, then sprinkle with semolina. Add the clotted cream, fold it into an envelope, and bake it on a preheated oven at 220°C for 6 or 7 minutes.
