A popular and trendy honey cake! This cake has been trending for several years now, and for good reason! It can be made in various shapes, like in my video, or you can also make a letter cake or a number cake. The layers soak up the moisture and become super soft and tender. Some people think the cake is dry. But this could be due to a poor recipe or something you did wrong. A proper honey number cake should be very soft after soaking! Dough: Eggs - 2 (110g) Sugar - 200g Honey - 100g Butter - 90g Wheat flour - 480-520g Baking soda - 1.5 tsp (8g) Salt - a pinch Bake at 180C for 7-8 minutes. Cream: Cream cheese - 350 g Powdered sugar - 150 g Butter - 130 g Whipping cream (33% or higher) - 70 g Pistachio paste - 50 g Filling: Raspberry confit: Raspberry puree - 150 g Sugar - 40 g NH pectin - 2 g Sugar to pectin - 15 g Citric acid - a pinch Mix the puree with 150 g of sugar and heat on the stove to 40-45°C. Separately, mix the pectin and sugar and drizzle it into the puree, stirring constantly. Bring to a boil. Remove from heat and stir in the citric acid.
