It’s one of the most iconic cakes in the country and a true showstopper both in looks and flavor. This classic version starts with a light, airy sponge cake sliced into three even layers. It's filled with a generous layer of raspberry jam, a thick layer of vanilla pastry cream, and a generous helping of unsweetened vanilla whipped cream. The whole thing is wrapped in a smooth layer of green marzipan, finished with a sweet dusting of powdered sugar and—traditionally—a delicate pink marzipan rose. But here’s the secret: a good Princess Cake needs rest. Sponge cake starts off dry, so once it’s assembled, it should chill in the fridge for at least a few hours—ideally overnight. That time allows the jam, cream, and pastry cream to sink into the sponge, creating those dreamy, moist layers that make this cake unforgettable. Honestly, this cake is pure magic.
