Like many other recipes in Mexico, they vary from place to place: some cook them with Mole Poblano sauce, others use a pasilla chile sauce, and my favorite version is with a thick Pipian sauce. Today, however, we are making these shrimp fritters with one of the most popular sauces, Guajillo chile sauce.
