In this video, I’m taking a traditional, naturally fermented mead base and introducing it to a harvest of wild cloudberries during secondary fermentation. Dropping these unique berries into secondary allows those delicate, tart, and complex alpine flavors to infuse perfectly into the alcohol without being lost to a aggressive primary ferment.
