Welcome back to my kitchen! Today, I'm focusing on simple midweek meal prep with a focus on freezer meal prep. I will show you how to prepare ingredients for easy freezer meals, perfect for easy freezer dinners and batch cooking. I'm filling my freezer with delicious options! MY HOME CHANNEL: / @adalineshome My MAIN CHANNEL: / @adalineskitchen MY AMAZON PAGE/SHOP: https://www.amazon.com/shop/adalinezook |RECIPES| Pumpkin Oat Muffins: Ingredients: -3 cups oat flour -1.5 cups canned pumpkin -1.5 cups egg whites -¾ cup water -1 tablespoon avocado oil -1 tablespoon apple cider vinegar -2½ teaspoons baking powder -3 teaspoons cinnamon -1 teaspoon molasses -1 teaspoon vanilla extract -⅜ teaspoon Pure Stevia Powder or 1/2 cup sugar (more if you like a sweeter muffin) -1/3 teaspoon ground cloves -1/3 teaspoon salt -Cinnamon & Sugar for topping if desired Instructions: Blend everything together until smooth. Taste and add more sweetener if desired. Pour the batter into 18 (greased) standard-sized muffin tin holes. (Don't use Muffin Tin Liners) Fill each hole ¾ of the way full. Top the batter with a sprinkling of cinnamon sugar and bake at 375° for 18 minutes or until a toothpick inserted into the center of a muffin comes out cleanly. Chicken And Rice Soup: Ingredients: -2 (16-ounce) bags frozen cauliflower florets -2 ½ quarts chicken broth -3 cups chopped carrots -3 cups chopped celery -1 large onion, diced -3 cups cooked rice -3 teaspoons Mineral Salt -Black pepper to taste -1½ teaspoons dried thyme -1/3 cup cottage cheese or 3 ounces cream cheese -4 cups shredded cooked chicken Instructions: Put the cauliflower in a pot with enough water to steam. Turn the heat down a little and simmer until the cauliflower is tender (takes just a few minutes.) Drain cauliflower. Put the cauliflower into a blender with enough of the broth to blend well and add salt, pepper, thyme and cream cheese or cottage cheese. Blend creamy mixture well. In a stock pot add the carrots, celery, onion, and enough broth to simmer veggies till tender. Once veggies are tender add cooked rice, creamy mixture and chicken. Allow to simmer at least 15 mins for flavors combine. Freezes well.
