Northern Baden - Salads, Cakes, Risottos and Falafel with Green Spelt | At our Neighbour's Table
Green spelt grains require a very specific stage of ripeness so that, when roasted over fire, they develop the distinctive aroma of green spelt. Only on a few days in summer can Jürgen Stätzler thresh unripe spelt and then dry it by hand over beechwood on his historic kiln. This processing method was discovered by farmers in the Bauland region, a small area in northern Baden, more than 300 years ago—by chance. Grünkern is available as whole grain, crushed grain, or flour. Traditional regional recipes include Grünkern soup and hearty Grünkern patties. Jürgen and his partner Dagmar Graser live a vegetarian lifestyle and use Grünkern in many dishes—salads, risottos, as fillings for Asian rolls, or as a base for falafel. The nutty grain also tastes great in cakes, giving baked goods a special touch. Whether savory or sweet, all dishes share the intense, robust flavor of the kiln-dried grain.
