Cook With Me II: Fruit Dumplings

In this video I walk you through another Czech dish. This time it's dessert! Fruit dumplings are served as a complete, sweet meal, and you can choose to use plums, apricots, strawberries, blueberries, or whatever fruit you would like...but in this video I use cherries :) CHERRY DUMPLINGS: -boil two large, UNpeeled Russet potatoes -wash & pit a quarter bag of cherries -peel the cooked potatoes after they have cooled enough to touch -grate the potatoes in a large mixing bowl -add Wondra (1/3 the weight of the grated potatoes), a pinch of salt, a little bit of butter, and one egg into the bowl -thoroughly mix the ingredients and knead the dough (add Wondra as necessary if the dough is too sticky) -cover a cooking board with Wondra and roll out the dough -cut the dough into small squares (big enough to contain four cherry halves) -take the edges of the square dough like a blanket, and cover the cherries -pinch the dumpling so that no fruit can be seen through the dough, and carefully roll the dumpling into a ball Repeat until you run out of dough (you should have enough for about 10 dumplings) -place the dumplings into boiling water and cook for six minutes If you are simply reheating fully cooked dumplings, then steam them for three minutes. Serve three hot dumplings over a scoop of cottage cheese.
