Close the switch valve and begin to pour 70 mL of water at 90°C in circular pour. Let the coffee bloom for about 40 seconds. (Immersion) 2. At 00.40, open switch valve and let all the water from the first immersion drain into the carafe. 3. At 00.59, close the switch valve again. 4. At 01.00, pour up to 200 mL of total target volume at 90°C in circular pour still with the switch valve closed. (Immersion). Let it steep until 01.50. 5. At 01.50, open the switch valve and let all the water drain into the carafe. 6. The total brew time is around 02.30 - 03.00. 7.
