Moringa Leaves Curry | Bangalore Style Munge ki Bhaji | Healthy Drumstick Leaf Recipe

This healthy recipe features moringa leaves, protein-rich toor dal, and a unique peanut-based spice mix. Follow this step-by-step guide to prepare this wholesome, aromatic dish right in your own kitchen! Ingredients List Main: Munge ki bhaji (Moringa leaves), Toor Dal (100g), Tomato (1 medium), Onion (1 medium). Masala Base: Garlic (6 pods), Coconut, Red Chillies (5-6), Coriander leaves, Zera Methi mix (1 tsp), Tamarind (for extract). Bhaji Crunch: Peanuts (100g), Garlic pods, Chilli powder, Coriander leaves. Tempering (Tadka): Mustard oil, Cumin seeds, Red chillies, Curry leaves. Seasoning: Salt and Chilli powder to taste. Cooking Process 1. Preparation: Clean and wash the moringa leaves thoroughly (2-3 times). 2. Boiling: In a pressure cooker, boil water. Add toor dal, washed leaves, tomato, and onion. Cook for 1 whistle. 3. Separating: Once cooled, remove the boiled tomato and onion. Strain the water (keep it) and separate the boiled greens/dal. 4. Making the Masala: Roast garlic, coconut, red chillies, and coriander. Grind with the boiled tomato, onion, and Zera Methi mix into a smooth paste. 5. Preparing the Chaar: Separately, grind the boiled bhaji and dal into a smooth paste. In a pot, combine the dal/bhaji paste, the ground masala, tamarind water, and salt. Mix well. 6. Tempering: Heat mustard oil until smoking. Add cumin, splitters, red chillies, and curry leaves. Pour over the Chaar. 7. Preparing the Side Bhaji: Roast peanuts, then grind coarsely with garlic, chilli powder, and coriander.
