The "dome" of mantecadas—that tall, cracked, and fluffy top—is no mystery: it's all about technique, temperature, and proportions. Here's the secret explained clearly and practically: ⭐ The Secret to the Perfect Dome in Mantecadas ✅ Proper beating: air = dome Beat the eggs and sugar very well (5–8 minutes) until light in color and fluffy. This trapped air makes the batter rise and form the dome. ✅Thick (but not dry) batter The batter for mantecadas should be thick, falling slowly from the ladle. If it's too runny, it will spread instead of rising. ✅Filling the mold Fill the liners ¾ full. If you fill them less, the dome won't form. If you fill them too much, the batter will run out. ✅Initial heat burst Bake in a slightly hotter oven: 190°C (375°F). The initial heat burst makes the batter rise and create the dome. ✅Don't open the oven at the beginning🛑 Opening the oven before the dome forms will cause them to deflate. ✅Good quality flour + fresh baking powder If the baking powder is old, there won't be a dome. Sift the flour to incorporate extra air.
