We enjoyed a traditional Italian cooking experience in Mantova - ITALY Slow Travel

In August we spent 4 nights in Mantova and explore the city both on foot and by bike. We even take a cooking class and learn about the traditional cuisine of the area. We've included the recipes below as well as the link to this experience. Risotto Mantovano Ingredients: Vialone Nano rice (1 small cup per person) Sausage mince (same weight as rice) 1 small onion 1 sprig of rosemary Splash of red or white wine grated grana padana or parmesan cheese Method: Put the rice in a saucepan with cold water and a generous pinch of salt. Use the same volume of rice as water (1 cup of rice = 1 cup of water). Cover. Bring to the boil, then cook gently until the rice has absorbed all the water. (15-20 minutes). Cook the sausage mince with chopped onion and rosemary, and a little wine. It's ready when all the wine has evaporated. Add the cooked sausage meat to the rice and mix well. Sbrisolona cake Ingredients: 150g plain white flour 150g cornmeal flour 150g white sugar 150g butter, softened 150g blanched almonds, chopped 2 egg yokes pinch of salt grated zest of 1 green lemon To decorate handful of whole almonds, unblanched Method Line a cake tin with baking paper and preheat the oven to 180°. Knead together all the ingredients (except the whole almonds) to make a dough. It should be quite rough and crumbly. Break it into small pieces and drop them into the cake tin, to give it a crumbled appearance. Scatter the whole almonds on top. Bake for 30 - 40 minutes, checking it regularly, to make sure it has a nice yellow colour. Leave to cool in the oven for a few minutes to ensure the cake is cooked through.
