The process involves over a dozen steps: selecting, soaking, grinding, filtering, boiling, curdling with sour broth — a local technique using fermented rice water — pressing, wrapping in cloth, fermenting with straw for three days at around 25°C, and finally grilling over charcoal. The natural fermentation gives the tofu a mild earthy aroma and a chewy texture that crisps up beautifully on the outside. This craft is officially recognized as part of Guizhou Province's Intangible Cultural Heritage.
