A super indulgent (but not too sweet) version of the classic pecan pie, perfect for fall. The homemade shortcrust pastry is enriched with nut flour for even more flavor, and the filling is soft and fragrant... A truly comforting dessert. 📝 Ingredients Homemade Shortcrust Pastry • 200g flour • 50g nut flour (or nut powder) • 100g cold butter • 1/2 tsp salt • 1 tbsp brown sugar • 40-50ml water Filling • 100g whole sugar or coconut sugar • 2 eggs • 50g melted butter • 1 tbsp 1 tbsp cornstarch • 200g pecans (can also be used with regular walnuts) • 1 tsp vanilla extract • 1 tbsp honey Also, I whisked together 400ml whipping coconut cream, 2 tbsp sugar, and vanilla. 🧑‍🍳 Directions 1. Preheat the oven to 175°C (350°F). 2. Roll out the dough on a floured surface, line a 23cm (9-inch) pan, and pinch the edges. 3. In a bowl, mix the sugar, eggs, and cornstarch. Add honey, melted butter, and vanilla. 4. Pour the mixture into the dough, and arrange the pecans attractively on top. 5. Bake for 40-45 minutes, until the filling is set but still slightly wobbly in the center. 6.
