Place 1.5 kg of beef lung in a separate container. Cover the lung with water and let it soak for 2 hours. After the lung is soaked, rinse well under running water. Cut the lungs into larger pieces. Place the lungs in a pot of boiling water and bring to a boil. Rinse the lungs under running water and add them to the pot of boiling water. Add 1 onion. 1 carrot. 2 bay leaves. Black peppercorns. Cover and simmer over medium heat for 2 hours. While the lungs are cooking, prepare the potatoes. 700 g potatoes. Place the potatoes in a pot and simmer until tender. Finely chop 1 onion. Fry the onion until golden brown. Remove the fried onion from the heat. Crack 1 egg into a separate bowl. Beat the egg with a whisk. 100 g sour cream (or Greek yogurt). 1 tablespoon vegetable oil. 15 g melted butter. 1/2 teaspoon salt. 1/2 teaspoon sugar. Mix well. 230g flour (add gradually). Knead the dough thoroughly and cover with plastic wrap for 30 minutes. Remove the potatoes from the heat and mash. 40g butter. 150ml milk. Mash the potatoes thoroughly. Add the fried onions to the potatoes. Mix well. Remove the plastic wrap from the dough. Divide the dough into 25g balls. Cover the balls with plastic wrap. Form the dough into a thin flatbread. Add 1 tablespoon of salt to the lungs. Mix well and remove from the heat. Fry the thin flatbreads in a hot, dry pan for 15 seconds on each side. Remove the lungs to a plate and let cool slightly. Fill the flatbreads with potatoes and fold them in half. Grease the pan with butter. Fry the flatbreads until golden brown on both sides. Chop 1 onion. Grate 2 carrots. Add a little vegetable oil to the pan. Sauté the onion until translucent. Sauté the carrots and onions. Cut the lungs into long strips. Add the lungs to the pan with the onions and carrots. Mix well. For the sauce: 3 garlic cloves. 50 ml soy sauce. 80 ml oyster sauce. 50 ml rice vinegar. 1 tablespoon honey. 1 teaspoon dried ginger. 1 teaspoon paprika. 1 teaspoon black pepper. ½ teaspoon cayenne pepper.
