Toasting the Rice Although this step was omitted in the video due to the pan size, I highly recommend toasting your rice in a pan for 2 to 3 minutes. Coating the rice with heat and fat cooks the surface starch slightly, creating a protective barrier. This keeps the grains from getting mushy like porridge, ensuring they hold their firm texture. Plus, it maximizes the rich, nutty flavor and helps control the starch, resulting in a Jambalaya with a much better mouthfeel. 2. Stirring Frequently Make sure to stir very often, as the starch from the rice can easily cause it to stick to the bottom. (Tip: Since Korean rice is high in starch, those of you using Jasmine or Basmati rice will find this process much easier!) 💡 Extra Tips for Success Let the steam out: Once you turn off the heat, give it a good stir to let as much steam escape as possible. This prevents the rice from getting soggy and makes it taste even better. Control the water gradually: It’s easy to accidentally add too much liquid.
