Easy Crunchy Cornmeal Cookies - a NEW FAVORITE
This week, prepare to be amazed at this super simple dump-and-go cookie recipe. It literally took 2 minutes to prepare and just 10 to bake. If you try these, let me know in the comments below. I'm sure you won't be disappointed... These polenta cookies are surprisingly addictive. Their sweet yet savory flavor makes them one of my all-time favorite cookies. My son Levi’s fiancée, Hannah, ate an entire cookie jar of these while staying at La Fortezza — they are obviously her favorite as well. Pre-order it today at https://annettejoseph.com/ INGREDIENTS (makes 18 cookies): ⅓ cup finely ground cornmeal 1&¼ cups type "00" flour ½ cup sugar ½ teaspoon baking powder 1 teaspoon fine sea salt 1 stick (8 tablespoons) cold unsalted butter, cut into cubes 1 large egg 1 large yolk PREPARATION Preheat the oven to 375°F. Line two 10×15-inch cookie sheets with parchment paper . In a food processor, pulse the cornmeal, flour, and sugar until fine. Transfer the mixture to the bowl of a stand mixer fitted with the paddle attachment. Add the baking powder, salt, and butter and mix on medium speed until combined (the mixture will resemble sand). Then, add the egg and egg yolk and mix on medium speed for about 3 minutes, until the dough is smooth. Wrap the dough loosely in plastic wrap, pat it into a wide, 1-inch-thick disk, and let it rest in the refrigerator for 30 minutes. With a knife, cut 1-inch squares out of the dough disk, then roll the pieces into 1-inch balls. Repeat until you’ve used all the dough. You should have about 18 balls. Arrange the cookie balls on the prepared baking sheets so they are 1 inch apart. Use two fingers to flatten them. Bake for 10 minutes, until light golden brown. Set aside to cool. The cookies will firm up while they cool.
