With love,Juliana Blueberry Banana Bread Ingredients 2 ripe bananas, mashed ½ cup unsalted butter, melted (or ⅓ cup neutral oil) ½ cup brown sugar ¼ cup granulated sugar 2 large eggs 1 teaspoon vanilla extract 1¾ cups all-purpose flour 1 teaspoon baking soda ½ teaspoon baking powder ½ teaspoon salt 1 teaspoon ground cinnamon (optional, but lovely) 1½ cups fresh blueberries 1 tablespoon flour (to coat the blueberries) Optional Topping 2 tablespoons coarse sugar A few extra blueberries Thin banana slices for the top Instructions 1. Preheat your oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper. 2. In a large bowl, whisk together the mashed bananas, melted butter, brown sugar, granulated sugar, eggs, and vanilla until smooth. 3. In another bowl, combine the flour, baking soda, baking powder, salt, and cinnamon. 4. Fold the dry ingredients into the wet ingredients until just combined. Do not overmix. 5. Toss the blueberries with 1 tablespoon of flour, then gently fold them into the batter. 6. Pour the batter into the prepared loaf pan. Top with extra blueberries, banana slices, and coarse sugar if desired. 7. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are fine). 8.
