Instant Pot told me this when I queried it "The air fry function is a much higher temperature, it will only give you that level of heat for one hour – we have programmed it that way. Whereas the dehydrate function is a much lower temperature and can be left on for 7 hours. The air fryer in the instruction book refers to the air fryer function, not all the whole machine."
