If you want to serve at an event I recommend making this a few days ahead of time and let the Ice cream freeze for a day or 2 at least. You can even make it a few weeks ahead of time. To add in other flavors you could steep herbs (or whatever you want to add) in the hot milk before tempering it into the eggs.
