And I'm starting with beautiful Rodez, hosted by the jovial Jean-Charles Bielansky, grandson of a buronnier (a shepherd from the Aubrac region), a popular figure in the city and manager of the Hôtel du Midi, ideally located in the heart of the former capital of Rouergue. On the agenda for this first part: the perfect location of his hotel for exploring the city, his professional journey as a passionate advocate for Aveyron, and a meeting with the Théron family, butchers from father to son for four generations!
