My love, Lena (and her recipe!) -   / lenaelkousy   www.presentplatesupperclub.com No-Bake Ginger Purple Sweet Potato Pie with Pecan Date Crust Crust: 1 c pitted dates 1 c pecans A lil vanilla and a lil salt Pulse chop in a food processor into a sticky dough, then press into a pie plate. Filling: 2 purple sweet potatoes, peeled and steamed ⅓ c coconut oil ¼ c maple syrup 1 T fresh grated or jarred ginger 1 t cinnamon 1 t vanilla ¼ t salt Chop and steam sweet potato(s) in a steamer. Puree all ingredients together in food processors, then spread evenly into pie dish.
