This is Kenta Tsukada from Acid Coffee. This is the 16th episode on YouTube! This time, we're making "iced cafe latte" for the summer. Using my usual triple basket espresso, I'll brew two versions: a classic iced latte with ice, and a "dirty" version without ice. My biggestこだわり (particularity/preference) is that you should "absolutely not stir" the first sip of the iced latte. I intentionally leave the espresso floating on top, so the "spicy part" and the "sweet part" come separately in your mouth, which is delicious. Ramen wouldn't taste good if it was all a thick paste, right? It's the same principle. If you make the iced coffee too blended from the start, it feels a bit wasteful. For extraction, I use a convex tamper (with a raised center) and, out of habit from long ago, I hit it quite hard. (It's a habit from my time at Paul Bassett. Foreigners often make fun of me for "hitting it so hard," haha). The mesh adjustment is a fine-tuning process each time, so please observe and feel the difference. The "Latte & Peat" I introduce midway through is highly recommended. It's a sophisticated smoky experience where you drink a smoky whiskey (like Kilchoman's Machir Bay or a 5-year-old Ardbeg with a shochu-like aroma) and an iced latte separately, then mix the aftertastes in your mouth after you've completely swallowed them. I tried it after seeing a customer do it, and it was fantastic. The latter half features an iced latte without ice, made in a chilled Gibraltar glass—the so-called "Dirty." Bear Pond Espresso in Shimokitazawa coined the name and it went viral (their naming sense is impressive, as expected from someone who used to work in advertising), but I'm not doing this out of respect for anyone in particular; I'm just doing what was popular 15 years ago, back when I was a coffee geek at home. The record recommendations in between segments range from José James (the kind you'd play when you have a girl over) to Donny Hathaway, Bill Evans, intense rock covers of Ella Fitzgerald, and Beyoncé's country music (Cowboy Carter is great value!).
