I've carefully explained how to secure a single-stitch rib in knitting. In "My Socks ❸" (   • わたしの靴下③はき口の編み方  ), I introduced a simple version of the "sewn bind off" rib. It's easy to do and has great stretch, but there's an issue with the opening rippling when laid flat. (It's not a problem when you're wearing it, so it's fine for wearing yourself, but some people might find it annoying if they want to give it as a gift.) If you use the old-fashioned single-stitch rib, there's no ribbing, it stays neat and even, and of course it's super stretchy, so I think it'll really take your knitting to the next level!
