PART 1: Sugar Dahlia Tutorial: How to Make a Café Au Lait Dahlia out of Gumpaste
Sugar Flower Tutorial: Café Au Lait Dahlia | Honey Crumb Cake Studio Dahlias are showstoppers! They make such gorgeous and memorable cake adornments. We’re here with a detailed tutorial in THREE parts, to help you master this challenging flower! In part 1, you'll learn how to build the flower center and the first 7 rows of petals. In part 2 (coming soon!), you'll learn how to create the wired outer petals and assemble the flower -- and we'll show you how to make dahlia leaves. In part 3 (also coming soon!), you'll learn to add color to your flower and leaves using petal dusts and edible paint, how to add a calyx to the dahlia and assemble the whole flower spray. Tools & materials needed for Part 1: Gumpaste (recipe link below) Cornstarch to prevent sticking Shortening (optional; to condition your gumpaste while kneading it) Water, egg whites, or edible glue, plus a small paintbrush Gel colors (I used Americolor Ivory and Dusty Rose to create the dusty pink/peach color used in the tutorial) 3/4” styrofoam rose cone 18 g floral wire (any color) 6-petal daisy cutter (mine is approx. 2" wide) Fine embroidery scissors 12-petal daisy or sunflower cutter (mine is from Wilton and is 3" wide) Flat tweezers (optional) Gumpaste rolling pin, foam pad, and large/medium ball tool Dresden tool and dogbone tool (aka "bone modeling tool") CelBoard (optional) Petal guide: Cut 4x petal sets with 2" wide 6-petal daisy cutter, for the first four layers Cut 2x petal sets with 3” wide daisy / sunflower petal cutter, for the next two layers Cut 3x more petal sets with the 2” wide 6-petal daisy cutter for the 7th layer of petals (these are individually shaped and rolled) [At this stage, leave your flower to dry overnight and we'll continue adding petals very soon in our upcoming Part 2.] Thanks for watching!
