Welcome to Spring in the English countryside. In today’s video, I’m making the most of the season by gathering dandelions and turning them into a simple dandelion 'honey' - a sweet, plant-based alternative to traditional honey, with a surprisingly similar flavour. I’m careful to only pick dandelions where there are plenty growing, and to leave enough for the bees and other wildlife. After spending time in the garden, I head into the kitchen to make the dandelion 'honey' (see recipe link below), before later potting up some flowers...snapdragons and stocks, and continuing to prepare the garden for the months ahead. This is a silent, slow living vlog with no talking...a moment of calm and simplicity. I hope it brings a little peace to your day.
