In this video, I'm sharing what moving back to london has been like for me and how I’ve slowly begun rebuilding a gentler, slower life here again. From quiet moments in nature to simple rituals, this season has reminded me that peace and beauty can exist even in the middle of a busy city. If you’ve ever felt overwhelmed, lost, or disconnected from yourself, I hope this video feels like a soft place to land ♡ All my love, Lika xx ~ Nettle and Lemon Cake: Ingredients: -100g nettle leaves (if you don’t have a blender, pick only the top leaves of the plant without any stems, or if you have a good blender like me, I use the whole top of the nettle and thin stems) -200ml plant milk (I used soy milk) -1tbsp lemon juice -100ml vegetable oil -270g plain flour -180g caster sugar -1tsp baking powder -zest of 1 lemon ~ (Optional) For the icing: 2tbsp icing sugar -2tsp lemon juice 1) Preheat the oven to 180 degrees C (Gas mark 4) Rinse the nettle leaves in water and drain to get rid of any dirt/dust. Now cover them with boiling water and let them sit on the side for around 4 -5 mins to get rid of the sting. 2)In a blender (preferably) mix the nettle leaves with the oil, lemon juice and plant milk until you have a nice smooth mixture without lumps. 3)In a bowl mix all the other cake ingredients and add in the nettle mixture. Fold in and mix well. 4)Grease a baking tin or loaf tin and pour the cake mixture in. 5)Bake for around 45 – 50 mins and then let it cool down if you wish to add icing later, or if not, just enjoy! 6)For the icing, mix the icing sugar with a few teaspoons of water until you see it form a nice runny mixture, and add in the lemon juice. 7)Drizzle on top of the cake in whatever way you wish and enjoy! ►ITEMS I USE: -Dress: Meadows -Glass Teapot: https://www.amazon.co.uk/Teabloom-Sto... -Copper Measuring Spoons: https://www.amazon.co.uk/GuDoQi-Stain... -Pestle and Mortar: from second hand shop -Ball Mason Jars: https://www.amazon.co.uk/Ball-Mason-G... -Glass Bottle with stopper: https://www.amazon.co.uk/KitchenCraft...
