Ingredients 2 cups raw rice 2 tbsp fenugreek seeds (methi seeds) 1/2 cup thin Poha Salt, to taste Water (for soaking and grinding) Instructions Step 1: Soak the Ingredients Rinse the Rice and Fenugreek seeds: Rinse rice and fenugreek seeds thoroughly in water. Soak Together: In a bowl, combine rice and fenugreek seeds. Soak in enough water for about 4–6 hours or overnight. Step 2: Grind the Batter Drain and Grind: After soaking, drain the water and grind the rice, and fenugreek seeds into a smooth batter. Add water gradually to achieve a thick, smooth, and pourable consistency. Add Salt: Add salt to taste and mix well. Step 3: Ferment the Batter Ferment Overnight: Cover the batter and let it ferment in a warm place for 8–12 hours or overnight until it rises and becomes slightly bubbly. Step 4: Prepare and Cook the Dosas Heat the Pan: Heat a dosa tawa or non-stick pan on medium heat. Spread the Batter: Pour a ladleful of batter onto the pan and spread it in a circular motion to form a thin dosa. Cook the Dosa: Cook for about 1–2 minutes until the bottom turns golden and crispy. Flip (optional): You can flip the dosa to cook the other side briefly, though traditionally only one side is cooked. Serve Hot: Serve the fenugreek dosa hot with coconut chutney, tomato chutney, or sambar. Tips Crispier Dosas: For extra crispy dosas, keep the batter slightly thicker and cook on medium-high heat.
