Puran Poli (Maharashtrian Sweet Flatbread) 🥣 Ingredients For Puran (Sweet Filling): 2 cups Split Chickpea (Chana Dal) 1½ cups Jaggery (crushed) ½ tsp Turmeric powder ½ tsp Salt 1 Tsp Cardom & Nutmeg powder 2 tsp Oil 3½ cups Water (for cooking dal) --- For Poli (Outer Dough): Wheat Flour - 2 Cups Maida - 1/2 Cup Fine Semolina - 1/4 Cup Salt & Turmeric Powder - 1/2 Tsp Oil - 2-3 Tbsp --- 👩‍🍳 Method Step 1: Cook the Dal Wash the chana dal 2–3 times until the water runs clear. In a pressure cooker, add dal, turmeric, oil, salt, and 3½ cups water. Pressure cook for 3–4 whistles until the dal is soft but not mushy. Drain excess water completely. Keep it aside to make Cutachi Aamati. --- Step 2: Prepare the Puran Transfer the cooked dal to a pan. Add jaggery and cook on medium flame. Stir continuously until the jaggery melts and mixes well. Cook until the mixture thickens and leaves the sides of the pan then add cardamom and Nutmeg powder , mix. Let it cool slightly, then grind or mash into a smooth mixture in mixer grinder. Make medium-sized balls of the puran. --- Step 3: Prepare the Dough Sieve dry ingredients together then add milk and water (as required) and make hard dough. Dip it in milky water for 1 hour. After remove from water and knead it for 5 to 10 minutes till it becomes soft and stretchy at the end add 2 Tbsp oil and knead it again for 2 minutes. --- Step 4: Make the Puran Poli Take a small ball sized dough roll slightly , put oil 2-3 drops spread over then spread little dry wheat flour. Then place one puran ball inside. Seal the edges and gently roll into a flat round poli using dry flour. --- Step 5: Roast the Puran Poli Heat a tawa on medium flame. Place the rolled poli on the tawa. Apply ghee on both sides and roast until golden brown spots appear.
