Mat3amji Episode five - Mjadaret Loubyieh!

In our fifth episode, we headed up to Kfardelkous - Zgharta to prepare Mjadaret Loubiyeh, a beloved village dish that is considered an honour to make for your guests. It's rooted in the area’s food culture, the original way with Georgina El Bayeh. Straight from the kitchen, with the stories, flavours, and details that shaped the dish! Guiding the journey was our host, Firas Wannous, CEO of FW Management, as he explored not only the recipe, but where it can go next and how forgotten Lebanese dishes can be brought back, developed, and introduced to today’s restaurant menus through his work as a consultant. Then we gave Mjadaret Loubiyeh a new direction with Emile Moawad owner of Mama Jay, who recreated the dish with an Italian twist while keeping its soul and giving it a fresh approach for today’s menus.
