Stuffed Onions or Sogan Dolma is a great Turkish recipe that you can cook for your family for the Christmas holidays. Enable subtitles in your language! 💬 😉 Ingredients: 7 white onions 1 large carrot 500 g minced meat 1/2 cup washed jasmine rice 3 garlic cloves 2 tbsp tomato paste 40 ml pomegranate molasses Juice of half a lemon 50 ml melted butter 4 sprigs parsley 1 tsp salt 1 tsp cumin 1 tsp coriander 1 tsp sumac 1 tsp curry 1/2 tsp pepper 3 tbsp olive oil For sauce: 500 ml of onion water 2 tbsp tomato paste 40 ml pomegranate molasses 1 tsp salt Instructions: Peel the onions. Cut both ends. Cut 6 of the onions in half down the middle and boil them in a pot with water. After about 20 minutes, the onions are ready. Drain them from the water and keep aside. Reserve the onion water for the sauce. Rinse the rice 3-4 times to remove the starch and drain. Finely chop the 7th onion. Fry together with the rice at a medium-high heat in a pan with olive oil, stirring. After a few minutes, add the pressed garlic. Cook for one minute. Add 40 ml of pomegranate molasses, the butter, 2 tbsp tomato paste, the juice of half a lemon, finely grated carrot and mix well. Add the minced meat and mash it up using a wooden spoon. Stir while cooking. After the minced meat darkens evenly, add the spices - coriander, cumin, sumac, curry, black pepper, salt and chopped parsley. Stir while cooking and after a few minutes remove the pan from the heat. Carefully separate each layer from the onion. At one end, put 1-2 tbsp from the stuffing and roll the onion. Place in a round tray. Arrange all the stuffed onion pieces tightly in the tray. Pour 500 ml of the onion water into a bowl. Add 40 ml of pomegranate molasses, 2 tbsp tomato paste and 1 tsp salt. Stir well with a wire. Pour the liquid over the stuffed onions in the tray. Seal the tray with aluminum foil. Bake in a preheated oven at 200C/400F for 1 hour. Then remove the foil and bake for about another 40 minutes or until the onions are lightly browned.
