Freshly made GOZLEME filled with Spinach, Mushrooms and Cheese: Turkish stuffed flatbreads in London
✓ I used to go past some of these Turkish shops & often wondered what the ladies in the window are rolling out & making.... .....but that was many years ago, now i know exactly what they do, they are making Gozleme; a Turkish stuffed flat bread; (if you've never heard of Gozleme they are similar to a French crepe/pancake or an Indian Masala Dosa or stuffed Paratha), usually freshly rolled out, filled with a savoury (or sweet) filling & then cooked on a domed, metal griddle / hot plate. On the day of my visit I ordered a "Fully Loaded" freshly cooked Gozleme consisting of Spinach, Mushrooms and Grated Cheddar Cheese (instead of the usual Feta Cheese)....it was genuinely a savoury delight !!! (Very hard to believe that in this day and age that it only cost me only £4.50). I am especially impressed and in awe of the double rolling technique that the lady uses. The gozleme dough is usually unleavened, and made using flour, salt and water, but gözleme can also be made from yeast dough as well. The dough is rolled thin, then filled with various toppings, sealed, and cooked over a griddle. It is a lot healthier and light because when it's being heated it is only lightly brushed with butter or oil. I have to admit that Gozleme are a firm favourite in our family, so much so that before the "UK Lockdown" we were getting these regularly (at least every week or every fortnight). I am seriousely craving Gozleme so cannot wait for the lockdown to be over. A special thank you to the owners & staff at the Cafe for warmly welcoming me & allowing me time & space to carry out my filming (& of course for the wonderful freshly prepared Gozleme !!!). (Note: that since the recording of this video the management and business name has changed, but the good news is that the Gozleme are still being served up fresh to order).
