The key to successful "Tebiraki" is to carefully slide your fingers along the bones."Tebiraki" tends to remove more bones compared to using a knife, which is why many professionals prefer this method. So far, I’ve only seen "Tebiraki" used for sardines. If I come across other fish that can be filleted this way, I’ll be sure to share it with you!
