Drain a total of 500g of sour cherries. (2 cups) Collect the juice. For the cherry pudding: 300 ml cherry juice from a glass (1/4 cup) 25 g cornstarch (1/5 cup) 1-2 tablespoons of sugar (to taste) Decoration: 1 teaspoon butter 70 g flaked almonds (3/4 cup) Cherry or strawberry jam For the white cream: 200 g cream cheese (4/5 cup) 500 g whipping cream (approximately 34% fat) 50 g sugar (1/4 cup) For the cherry cream: The cooled cherry pudding 200 g mascarpone or cream cheese (4/5 cup) Assemble the cake as shown in the video. Refrigerate for 30 minutes. Cake glaze: 250 ml cherry juice (from a glass) or water 1 pack of red cake glaze (11 g) Sugar to taste Place the cherry cake in the refrigerator for at least 4 hours (or overnight). Decorate with the remaining cream and almonds. Drain the cherries (sour cherries). Collect the juice. Set aside 12-14 nice cherries for decoration at the end. Cherry pudding: 350 g cherries (pitted!!) 1.5 cups 2 tablespoons of sugar (or to taste) 170 ml cherry juice (from the glass) 2/3 cup 70 g cornstarch (1/2 cup) Cream: 300 g mascarpone or cream cheese (1 1/5 cups) 500 ml whipping cream (approx. 35% fat) 2 cups 50 g powdered sugar (2/5 cup) 1 tsp vanilla extract Set aside 3-4 large tablespoons of the cream. Use it for decoration at the end. Now spread half of the completely cooled cherry pudding. Carefully spread 1/3 of the cream. Some compote juice Assemble the cake as shown in the video.
