Perfect for a gourmet appetizer, a rustic starter, or a homemade charcuterie board, it will delight lovers of authentic cuisine. 🛒 Ingredients 700g lean pork (loin) 500g pork liver 1kg pork jowl 2 onions 2 eggs 2 tbsp flour 4 cloves garlic 4 bay leaves 5cl Cognac (optional) 10g dried porcini mushrooms 1 bunch parsley 5 sprigs rosemary 1 tbsp 1 teaspoon Herbes de Provence 1 teaspoon paprika 1 teaspoon nutmeg 30 g salt (approximately 15 g/kg) 6 g pepper 1 sachet Madeira jelly ⏱️ Preparation Time Preparation: 25 minutes Cooking: 1 hour 30 minutes in a bain-marie at 180°C (350°F) Resting: Minimum 24 hours in the refrigerator 👨‍🍳 Tips & Tricks Resting time is essential for the flavors to fully develop. This terrine is even better after 48 hours. It keeps easily for several days in the refrigerator, well wrapped.
