Prawns Pickle: --------------- Ingredients: ------------ 250 g prawns, peeled and cleaned 1/2 tsp salt (for marination) 1 tsp red chilli powder (for marination) For Roasting & Grinding: ----------------------- 2 tbsp coriander seeds 1 tbsp mustard seeds 1/2 tbsp fenugreek seeds 1/2 tbsp cumin seeds Other Ingredients: ------------------ 150 ml sesame oil 1 1/2 tbsp ginger-garlic paste 2 tbsp red chilli powder 1/4 cup thick tamarind paste 3/4 tbsp salt (adjust to taste) Method: -------- 1. Wash and clean the prawns well. 2. Add 1/2 tsp salt and 1 tsp red chilli powder. 3. Mix well and marinate for 10 minutes. 4. Heat a pan and dry roast the coriander seeds, mustard seeds, fenugreek seeds, and cumin seeds until aromatic. 5. Let them cool, then grind into a fine powder and keep aside. 6. In the same pan, heat the sesame oil. 7. Add the marinated prawns one by one and fry until they are half cooked. 8. Remove the prawns from the oil and keep aside. 9. In the remaining oil, add the ginger-garlic paste and sauté until the raw smell disappears. 10. Add 2 tbsp red chilli powder and cook on low to medium heat for a minute. 11. Add the thick tamarind paste and cook the mixture well. 12. Add the half-cooked prawns and mix thoroughly. 13. Add the ground masala powder and salt. Mix well. 14. Cook until the mixture thickens and the oil separates. 15. Turn off the heat and allow the pickle to cool completely. 16.
