Harvesting Spruce Tips & Dandelions | Alaskan Summer Treats

With Alaska's Interior heating up and the late arrival of spring we embrace the chance to take a break from projects and collect dandelions and spruce tips right here in our own yard. We whip up a few delicious summer inspired treats with our harvested goods, including a new favorite, chocolate coated spruce tip & coconut popsicles. ~ Spruce Tip Popsicle Recipe ~ 2 - 14 oz cans coconut milk Juice of 2 limes 1 cup spruce tips 1/2 cup sweetener of your choice (spruce tip jelly used in this video) 1. Blend all ingredients in a blender. 2. Pour into popsicle mold (recipe makes 12) then freeze. Optional Coating 3. Melt desired amount of chocolate chips with 1-2 scoopfuls of coconut oil. 4. Remove popsicles and coat with melted chocolate mix, sprinkle coconut chips and return to freezer on parchment paper.
