Today I'm proposing a different way to make salmorejo. We're going to substitute carrots for bread, so it can be enjoyed by those who don't want to gain weight, as well as those with gluten intolerance. Let me know what you think! Ingredients: 80 g extra virgin olive oil 4 hard-boiled eggs 100 g diced Serrano ham 1 clove of garlic 1000 g quartered ripe tomatoes 120 g diced carrots 1 teaspoon salt 10 g apple cider vinegar Preparation: Place a jug on the lid of the Thermomix bowl and weigh the oil. Remove and set aside. Place the eggs in the bowl and chop for 2 seconds/speed 4. Remove from the bowl to a separate bowl and set aside. Place the ham in the bowl and chop on Turbo/1 sec/2-3 times. Remove to another bowl and set aside. Place the garlic, tomato, carrots, salt, and vinegar in the bowl and blend for 3 minutes/speed 10. Use the spatula to scrape down the sides of the bowl. Place the measuring cup on the lid, program for 1 minute/speed 5, and while it's blending, slowly pour the oil onto the lid. Transfer the salmorejo to a serving dish and refrigerate.
