Tahini Sesame Cookies Makes 12 cookies ½ cup unsalted butter ¼ cup tahini ½ cup brown sugar ¼ cup sugar 1 egg Vanilla essence/extract 1 ¼ cups plain flour ½ tsp baking soda Salt 1 bar white chocolate, broken into chunks. Sesame seeds Pre-heat oven to 180C. Melt the butter in a pan until it goes brown. Allow to cool. Put the cooled butter in a large bowl, along with the sugar and mix. Break the egg in and mix together. Add a splash of vanilla essence and the tahini and fold into the mixture. Add the flour, salt, baking soda and fold in gently. Add the chocolate chunks and mix into the mixture. Form balls of the mixture with your hands, then dip the balls into the sesame seeds, so that the tops of them will have a coating of sesame seeds. Lay the balls out on a tray, with the sesame coated sides up. Place in the fridge for 30 minutes or in the freezer for 10 minutes. Once refrigerated for the appropriate time, remove the balls from the fridge and transfer the cookies to another baking tray, lined with baking paper.
