VERACRUZ-STYLE TRIPE STEW Ingredients: 2.5 kg tripe 1.5 beef feet **************************************** (for cooking the tripe) 2 pieces of onion 2 tablespoons dried oregano 1 sprig of thyme 10 allspice berries 10 large garlic cloves 10 bay leaves **************************************** 400 ml lemon juice 1 cup apple cider vinegar *************************************** 2 red tomatoes 10 guajillo chiles 3 large garlic cloves To accompany the tripe stew: onion, habanero chiles, and limes (I forgot to mention) And don't forget the epazote!
