Air-Fried (Sun-Dried) Tomatoes - These pack a punch!
We love using sun-dried tomatoes all year so made our own in the air fryer. Cut tomatoes into 1" pieces and place skin down on the air fryer rack. Sprinkle with kosher salt and drizzle with olive oil. Set at 165F - 195F for 6-8 hours until dried. Place in a jar and fill with olive oil. Use immediately or refrigerate until needed. The oil will congeal in the fridge & that is okay.
