Magdalenas caseras esponjosas | EL COMIDISTA

They're not muffins. They're not cupcakes. They don't have chocolate, filling, or toppings. They're traditional homemade muffins, in their fluffiest and most spongy version. WRITTEN RECIPE: https://bit.ly/magdalenascaserasespon... The old-school muffin is a relatively simple pastry, both in terms of ingredients and execution. What's not so easy is getting them to turn out fluffy and enjoyable in the absence of milk/coffee/whatever to dip them in. Possessed by a muffin craving in the midst of lockdown, I tried several recipes, and none of them completely satisfied me in this regard: they were "good tasting"... but a bit dry. That's why I turned to my baking oracle, my sister-in-law May, who recommended the ones from the blog Comiendo con Reyes (Coming with the Kings), with the promise that they would be perfect. I made them and I was right: they were the delicious, fluffy muffins I had been looking for.
