This is a review of Matsuya's test-marketed "Rich and Flavorful Stewed Hamburger Steak with Mushroom Duxelles." The name is quite long, but "Mushroom Duxelles" is a side dish similar to a rice accompaniment in Japan. According to the description, the "Rich and Flavorful Stew" is a stew seasoned with cocoa and Hatcho miso. It certainly had a strange demi-glace sauce flavor, with a hint of cocoa, or rather, chocolate. I take my hat off to Matsuya for achieving French cuisine with this combination.
