Here's the recipe for making one of the world's most famous cheeses at home: Parmesan. The inspiration for this Parmesan cheese recipe comes from Italy. There, wheels of cheese can weigh 30 to 40 kilograms. Obviously, that's not what we're going to make today. Our recipe will yield a 1.5-kilogram wheel. Parmesan is a cheese aged for a long period, a minimum of 12 months, and sometimes for several years. If you've ever bought this cheese in a store, you know it's a very hard cheese that's usually grated over cooked dishes. This video shows all the steps for making homemade Parmesan cheese. Ingredients: 12 liters of partially skimmed milk (2.0% to 2.5%) 1/2 tsp Thermophile Culture* 3/4 tsp 1 teaspoon Calcium Chloride in 1/4 cup unchlorinated water 1/2** teaspoon Rennet in 1/4 cup unchlorinated water 1/8 teaspoon Lipase in 1/4 cup unchlorinated water Brine (I use a saturated concentration) *Use 30% to 50% less starter culture for raw milk **Rennet doesn't always have the same strength.
