Let's start season 2 of the Pathfinder Outdoor Kitchen with a Breakfast Skillet! Join Pathfinder School Instructor Matt Mercer for this delicious camp recipe! Don't forget to submit your recipe to [email protected] Recipe: Breakfast Skillet Dice a whole potato (skin on or peeled). Fry in skillet with oil. Add onions and choice of peppers, green, hot etc. Set aside when cooked to your liking. In skillet cook choice of sausage, bacon, or ham (or combination). When done set aside and chop up or crumble. In skillet cook scrambled eggs (2 or 3 large) in butter. Optional - add diced tomatoes and mushrooms. Set aside. Now layer in skillet: 1-potatoes, thin layer of shredded cheese of choice: 2-scrambled eggs: 3-meat: 4-top with another thin layer of shredded cheese.
