Not wanting to miss the chance to try the famous “bougatsa” of Serres, I had arranged to visit a local workshop renowned for its long-standing tradition. There, I was welcomed by Nikos Tsantsanis, the production manager and son of the owner. Young and sociable, Nikos spoke to me enthusiastically about the family business. The workshop's history dates back to 1952, when his grandfather, Giannis, opened the first shop. At the end of the visit, I tasted their “bougatsa” (phyllo custard pie), and it was exactly as I’d imagined – crispy, with a rich filling and a flavor that evoked tradition and quality.
