San Carlos y sus encantos / Río San Juan

Magüeso is an exquisite fish soup made exclusively with mojarras, very typical and unique to San Carlos and Río San Juan. It represents a transition between the Pacific and Caribbean regions. It's the perfect blend of coconut flavor, crabs, and fish from Lake Cocibolca and the San Juan River. Also called "mahuesa," to seal the soup, they add a sauce made with butter, tomato, bell peppers, and onions, with a touch of banana vinegar and a touch of salt and pepper. Crab soup may be missing, and some restaurants, to add their own signature, add cow's milk and cream, and color it with a recado de achiote (annatto seasoning). Interestingly, since it's a soup, it doesn't contain vegetables, roots, or tubers like rondón.
