Macerate the Berries: In a small bowl, toss the berries with 1 tbsp sugar and lemon zest. Set aside to let the juices develop while you cook. 2. Preheat: Place your Fry Pan (or Saute Pan) into the oven and preheat to 220°C (425°F). It’s important the pan is hot! 3. Mix the Batter: In a blender or with a whisk, combine eggs, milk, flour, sugar, vanilla, and salt. Blend until completely smooth and slightly frothy. 4. Melt the Butter: Carefully remove the hot pan from the oven using a mitt. Drop the 2 tbsp of butter into the pan and swirl until melted and bubbling. 5. Bake: Immediately pour the batter into the center of the pan. Return it to the oven and bake for 15–20 minutes until the edges are deep golden brown and have puffed up high above the rim. 6. Serve: Do not open the oven door while it's baking! Once done, slide it onto a board, top with the macerated berries, and a dusting of powdered sugar. Spring Garden Quiche with Leeks, Bacon & Gruyère Prep time: 15 mins | Cook time: 40 mins | Serves: 6 Ingredients • 1 refrigerated or homemade pie crust • 4 slices thick-cut bacon, chopped • 2 large leeks, white and light green parts only, thinly sliced • 6 large eggs • 1 ½ cups whole milk • 1 cup Gruyère or Swiss cheese, shredded • ½ tsp salt and ¼ tsp black pepper • Fresh chives or parsley for garnish Instructions 1. Prep the Crust: Fit your pie crust into a 9-inch pie dish. Crimp the edges and set aside. Preheat your oven to 190°C (375°F). 2. Sauté the Filling over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to remove the bacon and place it on a paper towel. 3. Soften the Leeks: Discard all but 1 tablespoon of the bacon fat. Add the sliced leeks to the pan and sauté for 5–7 minutes until they are soft, translucent, and buttery. Remove from heat. 4. Assemble: Scatter the crispy bacon, sautéed leeks, and shredded cheese into the bottom of the pie crust. 5. Whisk the Custard: In a medium bowl, whisk together the eggs, whole milk, salt, and pepper until well combined. Pour the mixture slowly over the fillings in the crust. 6. Bake: Place the quiche in the oven and bake for 35–45 minutes. The edges should be golden, and the center should have a slight jiggle but be mostly set. 7. Rest: Let the quiche rest for 10 minutes before slicing.
