Beach Fishing - Barton on Sea - pulley dropper rig comparison with up and over

Looking to repeat my PB small eye ray from the same venue. I take this opportunity to try out the pulley dropper rig that was requested on the channel and compare it to my favourite, the up and over. I have plenty of bait but find out on the beach that most of it is still frozen. Luckily the sand eel defrost quicker than the rest and on they go.
