We love this around here, it's one of those quick and easy recipes that feed an army while on a budget! 1 lb ground beef 1 yellow onion 1 teaspoon ground cumin Brown and crumble your beef with the onion and add the cumin, mixing well. Also salt and pepper to taste. 1 can corn drained 1 can black beans drained 1 can enchilada sauce 1 1/2 cups shredded cheddar cheese tater tots to cover the casserole dish mix together the ground beef mixture, corn, black beans and enchilada sauce in a 9 X 13 casserole dish. Sprinkle cheese on top, and add tots in a single layer on top of cheese. Bake in a preheated 350 degree oven for 40-45 minutes. Garnish with cheese, green onions, black olives and sour cream. Fresh tomatoes would go nicely with this as well!
